Questions

How do I scale a cake recipe to a bigger pan?

Multiply every ingredient by the new pan’s area divided by the old pan’s area. An 8 inch round to a 12 inch round is about 2.25 times the batter.

How many grams are in a cup of flour?

About 120 grams of all-purpose flour per cup, according to the King Arthur ingredient weight chart.

Why do cups and grams differ by ingredient?

A cup measures volume. A cup of sugar weighs more than a cup of flour, so each ingredient needs its own grams-per-cup value.

Do I need to change the baking time?

Usually, yes. Bigger or deeper pans take longer. Start checking at the original time and keep going until a tester comes out clean.
