- 01Cost the flour and extrasFlour, salt, seeds and inclusions for one batch, at what you paid.
- 02Count your hands-on timeMixing, shaping, scoring and baking. Proofing time you’re free doesn’t count.
- 03Add packaging, overhead and profitLong bakes use a lot of oven energy, so don’t skip overhead.
- 04Check the price per loafDivide by the loaves in the batch and compare with bakeries near you.
The formula: ingredients + packaging + (hours × hourly rate) + overhead = true cost. Add your profit % on top, then divide by loafs to check the price per loaf.
Questions
How much should I charge per hour?
Start with what you’d want to earn at a job with similar skill. Many home bakers set a rate and raise it once orders are steady.
What counts as overhead?
Oven and fridge energy, water, pans and mixers wearing out, and small supplies you don’t track per recipe.
Why is my bread price higher than the bakery down the street?
Shops buy in bulk and spread costs over many orders. Custom work is priced for your time, which is what customers are paying for.
Can I save my results?
Yes. A free BakerTab account saves up to 15 recipes and updates their cost when ingredient prices change.
